Huevos Rancheros with Fresh Salsa

A classic Mexican dish featuring eggs, salsa, and cheese on a corn tortilla.

Ingredients
  

  • Cooking spray
  • 4 6-inch corn tortillas
  • ½ tablespoon vegetable oil
  • 1 ½ cups egg substitute
  • 2 tablespoons cheese, shredded
  • 2 cups fresh salsa (Pico de Gallo)
  • teaspoon black pepper

Instructions
 

  • Preheat oven to 450 F.
  • Lightly brush tortillas with oil on both sides. Place tortillas on baking sheet and bake for 5 to 10 minutes or until tortillas are crisp on the edges. Set aside.
  • Spray a large skillet with cooking spray.
  • Add egg substitute to skillet and cook over medium heat for 2 to 3 minutes, until eggs are set.
  • Place equal amounts of egg on each tortilla. Top with ½ tablespoon cheese.
  • Place under the broiler for about 2 minutes until cheese is melted.
  • Spoon ½ cup fresh salsa over each tortilla and top with ground black pepper. Serve warm.

Notes

Change it Up
Add other vegetables to this recipe, like chopped bell peppers.
