Pico de Gallo

A fresh salsa made with tomatoes, onion, cilantro, garlic, and jalapeno peppers. Serve with chips as a dip or topping for lean proteins or tacos.

Ingredients
  

  • ¾ pound tomatoes (3 medium or 6 plum or Roma), chopped
  • 1 medium onion, chopped
  • ½ cup cilantro, rinsed and chopped
  • 1 jalapeno pepper, seeds removed, finely chopped
  • 2 cloves garlic, finely chopped, or 2 teaspoons jarred minced garlic
  • 1 lime, juiced
  • ¼ teaspoon kosher salt

Instructions
 

  • Combine all ingredients in a large bowl.
  • Serve with baked tortilla chips.

Change it Up
  • No tomatoes on hand? Use melons, mangos, plums, peaches, or cucumbers.
Prep Tip
  • Tomatoes are one of the few fruits and veggies that still ripen after they are picked. The quickest ways to ripen tomatoes are to put them on a sunny windowsill, or store them in a paper bag on the counter. If you want to really speed up the ripening process, add a banana or apple to the bag and be sure to poke a few holes in the bag for air.
