Garlicky Green Beans

Ingredients
  

  • 4 cups fresh green beans, trimmed
  • 1 tablespoon olive oil, or vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced, or ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • 1 teaspoon sesame oil, optional
  • 1 tablespoon toasted sesame seeds, optional

Instructions
 

  • Fill a large pot half full with water. Place green beans in the pot and bring to boil. Cook green beans until just tender, about 8 to10 minutes. Drain.
  • Whisk olive oil, sesame oil, garlic, soy sauce and black pepper in a large bowl.
  • Add green beans to the bowl and mix until well coated with dressing.
  • Marinate beans in dressing for at least 30 minutes, tossing every 10 minutes.
  • Sprinkle with toasted sesame seeds, if desired.
  • Serve at room temperature or refrigerate and serve as a cold side dish or salad.

Notes

Prep Tip
You can also use the microwave to cook the green beans. Trim them first, then place in a microwave-safe bowl with 2 tablespoons water. Cover and cook on high until tender, about 3 to 6 minutes. Drain.
Change it Up
Try using fresh asparagus in place of green beans.
