Ingredients
- 2 cups potatoes, chopped
- 2 tablespoons olive oil
- 1 cup ham, cubed
- ½ onion, chopped
- ¼ cup herbs, chopped
- 2 cups spinach, chopped
- 8-12 eggs, beaten
- 1 cup goat cheese
Instructions
- Preheat oven to broil.
- Cook potatoes until fork tender.
- In cast iron skillet, Brown ham in olive oil.
- Remove ham from skillet and sauté onion. add chopped herbs.
- Add potatoes and cook until browned.
- Add greens and stir until cooked.
- Remove skillet from heat. add eggs.
- add ham, goat cheese, salt and pepper.
- Broil for 5-10 minutes and watch carefully for eggs to get puffy.
