Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- One (15-ounce) can black beans, undrained, or two cups cooked black beans
- One (14.5-ounce) can stewed tomatoes, undrained
- 1 teaspoon oregano
- ½ teaspoon garlic powder
- 1 ½ cups uncooked instant brown rice
Instructions
- In a large pan, heat oil over medium heat.
- Add onion to pan and sauté until tender.
- Add beans, tomatoes, oregano, and garlic powder.
- Bring to a boil, stir in rice.
- Cover, reduce heat and simmer for 10-15 minutes, stirring occasionally.
- Remove from heat and let stand 5 minutes. Fluff rice with fork before serving.
