Ingredients
- 2-3 cucumbers, sliced into rounds
- 36 round rice crackers
- 4 ounces hummus
Instructions
- Spread a thin layer of hummus on crackers.
- Arrange in this order: cucumber, cracker with hummus then cucumber. Repeat as many times as desired.

Nutrition Tip
- All vegetables are good for you. You could also use zucchini or yellow summer squash instead of, or in addition to, cucumbers in this recipe.
- Don’t cut the cucumbers too thick or the stacks will fall over.
