Ingredients
- 1 cup bread crumbs
- 1 cup all-purpose flour
- 1 teaspoon poultry seasoning
- 1 tablespoon sodium-free all-purpose seasoning
- 1 teaspoon lemon pepper seasoning
- ½ teaspoon creole seasoning
- 1 cup skim milk
- 2 chicken thighs, skin removed
- 8 chicken breasts, skin removed
- 2 chicken drumsticks, skin removed
- Nonstick vegetable cooking spray
Instructions
- Preheat oven to 400 F. Lightly coat a baking sheet with vegetable cooking spray.
- Add all dry ingredients to a large zip-seal plastic bag. Seal and shake well to combine.
- Pour skim milk into a shallow dish. In batches of 2-3 pieces, add chicken to skim milk to moisten, then place in the bag of dry ingredients.
- Shake to coat chicken, then remove and place pieces on baking sheet. Repeat until all pieces of chicken are evenly coated.
- Lightly spray the chicken with vegetable spray.
- Place baking sheet in oven on the bottom rack. Bake for 1 hour, turning pieces every 15 minutes to allow for even browning.
- Serve hot.
