Ingredients
  

  • 1 cup bread crumbs
  • 1 cup all-purpose flour
  • 1 teaspoon poultry seasoning
  • 1 tablespoon sodium-free all-purpose seasoning
  • 1 teaspoon lemon pepper seasoning
  • ½ teaspoon creole seasoning
  • 1 cup skim milk
  • 2 chicken thighs, skin removed
  • 8 chicken breasts, skin removed
  • 2 chicken drumsticks, skin removed
  • Nonstick vegetable cooking spray

Instructions
 

  • Preheat oven to 400 F. Lightly coat a baking sheet with vegetable cooking spray.
  • Add all dry ingredients to a large zip-seal plastic bag. Seal and shake well to combine.
  • Pour skim milk into a shallow dish. In batches of 2-3 pieces, add chicken to skim milk to moisten, then place in the bag of dry ingredients.
  • Shake to coat chicken, then remove and place pieces on baking sheet. Repeat until all pieces of chicken are evenly coated.
  • Lightly spray the chicken with vegetable spray.
  • Place baking sheet in oven on the bottom rack. Bake for 1 hour, turning pieces every 15 minutes to allow for even browning.
  • Serve hot.
