Beet Butter

A creamy and slightly sweet plant-based spread with beets, walnuts, vanilla, and maple syrup.

Equipment

  • Blender or food processor

Ingredients
  

  • 8 dark red beets, scrubbed clean
  • 1 cup walnuts
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Instructions
 

  • Cube the beets and boil for for 20 minutes until fork tender.
  • Blend beets and all other ingredients in the food processor until completely smooth.
  • Serve with crackers or bread.
