Equipment
- Blender or food processor
Ingredients
- 8 dark red beets, scrubbed clean
- 1 cup walnuts
- 2 tablespoons olive oil
- ½ teaspoon sea salt
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
Instructions
- Cube the beets and boil for for 20 minutes until fork tender.
- Blend beets and all other ingredients in the food processor until completely smooth.
- Serve with crackers or bread.
