Pasta with roasted tomatoes, garlic, and creamy feta cheese. |
Ingredients
- 16 ounces cherry tomatoes
- 4 cloves garlic, chopped
- 4 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ cup tomato sauce
- 2 tablespoons grated Parmesan
- 8 ounces pasta (e.g., bowtie, cavatappi, penne, rotini, etc.)
- 8-ounce block reduced-fat feta cheese
Instructions
- Preheat oven to 400 F.
- Place feta in the center of a 9-by-9-inch baking dish.
- Add the tomatoes around the feta.
- Sprinkle the chopped garlic over feta and tomatoes.
- Drizzle olive oil over feta and tomatoes.
- Sprinkle Italian seasoning on top.
- Bake for 30 minutes.
- While the cheese and tomatoes are in the oven, cook pasta according to directions on package. Drain pasta.
- Remove baking dish from oven and lightly mash feta with a fork.
- Add cooked pasta and stir into feta tomato sauce until well coated. Serve hot.
