Ingredients
- 6 medium sweet potatoes (about 4 cups), scrubbed clean
- ½ cup brown sugar, packed
- 2 teaspoons flour, sifted
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon orange peel, grated (or zest)
- 2 teaspoons reduced calorie soft tub margarine
- 1 cup orange juice
Instructions
- Preheat oven to 350 F.
- Cut sweet potatoes in half. Boil until tender but firm, about 20 minutes.
- When cool enough to handle, peel and cut into ¼-inch thick slices.
- Combine sugar, flour, salt, cinnamon, nutmeg, and orange peel.
- Place half of the sweet potatoes in a medium-sized casserole dish. Sprinkle with spiced sugar mixture.
- Dot with half of the amount of margarine.
- Add a second layer of sweet potatoes, and the rest of the ingredients in the same order as before.
- Add orange juice.
- Bake uncovered for 20 minutes.
