Ingredients
  

  • 6 medium sweet potatoes (about 4 cups), scrubbed clean
  • ½ cup brown sugar, packed
  • 2 teaspoons flour, sifted
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon orange peel, grated (or zest)
  • 2 teaspoons reduced calorie soft tub margarine
  • 1 cup orange juice

Instructions
 

  • Preheat oven to 350 F.
  • Cut sweet potatoes in half. Boil until tender but firm, about 20 minutes.
  • When cool enough to handle, peel and cut into ¼-inch thick slices.
  • Combine sugar, flour, salt, cinnamon, nutmeg, and orange peel.
  • Place half of the sweet potatoes in a medium-sized casserole dish. Sprinkle with spiced sugar mixture.
  • Dot with half of the amount of margarine.
  • Add a second layer of sweet potatoes, and the rest of the ingredients in the same order as before.
  • Add orange juice.
  • Bake uncovered for 20 minutes.
