Zucchini Turkey Skillet

Ingredients
  

  • Cooking spray
  • 1 medium onion, chopped
  • 1 pound lean ground turkey
  • Two (14.5-ounce) cans reduced or low-sodium, or no salt added diced tomatoes
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • 2 to 3 medium zucchini, sliced

Instructions
 

  • Spray large frying pan with cooking spray and bring to medium heat.
  • Add onions and sauté for 3 minutes or until translucent.
  • Add ground turkey and cook until meat is no longer pink, about 10 minutes.
  • Add canned tomatoes with juice, Italian seasoning, garlic powder, and pepper and simmer over medium heat, about 10 minutes.
  • Add zucchini and cook 3 minutes or until tender.
  • Taste and adjust seasoning as needed. Serve.

Notes

Extra Servings, Extra Value
This recipe makes more than four servings, making the overall cost a bit higher—but each serving stays around $1.25 or less. Save extra portions in the fridge or freeze them to enjoy later.
Change it Up
  • Replace turkey with lean ground beef, chicken, cooked lentils, or white beans.
  • Use turmeric instead of Italian seasoning.
  • Add diced bell peppers to Step 2 and corn to Step 5.
  • Try substituting ground venison. Add a little oil or butter while cooking, or mix in moisture-boosters like sautéed onions, a splash of broth, or even a spoonful of tomato sauce to keep it tender and flavorful.
