Ingredients
Makes 10 servings. Check items off as you go.
- 6 medium potatoes peeled and cubed
- 2 large carrots peeled and cubed
- 3 large cloves garlic minced (or 1-1½ tablespoons jarred chopped garlic)
- ½ cup low-sodium chicken or vegetable broth
- 1 tablespoon butter
- Toppings (cheese, chives, bacon, parsley, sour cream) (optional)
Directions
- Combine carrots and potatoes in large pot. Fill with cold water. Bring to a boil and cook for 5 minutes.
- Add garlic and reduce heat to simmer until vegetables are tender (about 35 minutes).
- Drain pot and keep 1 cup of the cooking liquid.
- Mash carrots, garlic, and potatoes with hand masher or whisk.
- In a small pan, heat butter and chicken broth over medium heat until butter melts.
- Slowly stir broth mixture into the mashed potatoes.
- If necessary, add the reserved cooking liquid until potatoes reach desired thickness.
- Garnish with desired toppings.
