mozzarella cheese,

Instructions
Preheat oven to 400 F.
Lay chicken breasts in a baking dish in a single layer.
Spread 1 tablespoon of the pesto on top of each chicken breast.
Cut the tomato into ½-inch thick slices and lay 2 slices on top of each chicken breast.
Sprinkle the cheese over the top of the chicken breasts.
Bake for 40 minutes or until the chicken is done and the juices run clear.
Serve over brown rice or whole-grain pasta.
