Watermelon Salad

A refreshing summer salad with watermelon, cucumbers, creamy feta cheese, and a twist of lemon.

Ingredients
  

  • 8 cups watermelon, cubed
  • ½ cucumber, sliced
  • teaspoon kosher salt
  • 4 basil leaves, thinly chopped
  • ½ cup feta cheese, crumbled
  • Zest of ½ lemon, optional

Instructions
 

  • Place watermelon, cucumbers, salt, and basil in a large bowl. Mix gently.
  • Top with crumbled feta and lemon zest, if using.
  • Serve cold.

Notes

Change it Up
  • Add ½ jalapeño pepper, seeded and finely diced.
  • Add fresh mint and thyme.
  • Add cubed cantaloupe and sliced peaches or strawberries.
