Ingredients
  

  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 2 ¼ cups cucumbers, seeded and diced
  • 1 cup cherry or grape tomatoes, halved lengthwise
  • ¼ cup red onion, diced
  • One 15-ounce can chickpeas, drained and rinsed
  • 2 tablespoons fresh basil, torn, optional

Instructions
 

  • Whisk together red wine vinegar, oil, salt, and pepper in a large bowl.
  • Add cucumbers, tomatoes, onion, and chickpeas and gently mix.
  • Chill at least one hour.
  • Garnish with fresh basil, if using, and serve immediately.
