Ingredients
- 6 ounces soba (buckwheat) noodles, uncooked
- 2 teaspoons sesame or canola oil
- One 1-pound pork tenderloin, trimmed and cut into 2-inch strips
- 1 tablespoon chili-garlic sauce
- 1 teaspoon fresh ginger, grated
- 1 small red bell pepper, cut into strips
- ¼ cup reduced-sodium chicken broth
- 1 ½ tablespoons low-sodium soy sauce
- 1 tablespoon peanut butter
- 4 green onions, cut into 2-inch pieces
Instructions
- Cook noodles according to package directions.
- Drain and rinse noodles with cold water.
- In a large skillet, heat oil over medium-high heat.
- Add pork, chili garlic sauce, and ginger to pan. Stir-fry for 2 minutes.
- Add bell pepper strips to pan and stir-fry another 2 minutes.
- Add broth, soy sauce, and peanut butter to pan.
- Reduce heat to low and cook for 1 minute or until sauce becomes slightly thick.
- Stir in green onions. Serve over noodles.
