Sweetie Pie Quesadillas

Mexican-inspired quesadillas featuring sweet potatoes, black beans, and cheese in a crispy baked tortilla.

Ingredients
  

  • Four 10-inch tortillas
  • ½ cup low-fat, low-sodium shredded cheese
  • ½ cup canned black beans, drained and rinsed
  • 2 cups cooked sweet potatoes, diced or mashed
  • Half (1.0-ounce) package low-sodium taco seasoning mix
  • 1 cup salsa

Instructions
 

  • Preheat oven to 400 F.
  • Add sweet potatoes and taco seasoning to a medium bowl. Mix gently until potatoes are well coated.
  • Spread sweet potato filling on half of each tortilla.
  • Spoon black beans on top of sweet potato filling and sprinkle with cheese. Fold each tortilla in half .
  • Place tortillas on on a baking sheet and bake for 20 minutes, flipping tortillas after 10 minutes. Or brown in a skillet on medium-high heat for 3-5 minutes on each side.
  • Serve with salsa for dipping.

Notes

Prep Tip
If you don't have taco seasoning, use spices like paprika, cumin, chili powder, and garlic powder to season sweet potatoes.
