Strawberry, Peanut Butter, and Banana Fold-Overs

An easy on-the-go snack with fruit and peanut butter wrapped in a whole-grain tortilla.

Ingredients
  

  • 3 tablespoons peanut butter, divided
  • Two 10-inch whole-grain tortillas
  • 1 large ripe banana, sliced
  • 5-6 large strawberries, sliced
  • Dash of cinnamon, optional
  • Cooking spray

Instructions
 

  • Spread 1 ½ tablespoons peanut butter evenly and to the edges of each tortilla.
  • Cover half of each tortilla with half of the sliced bananas and strawberries.
  • Sprinkle with cinnamon, if using.
  • Fold each tortilla in half and press gently to secure.
  • Coat frying pan well with cooking spray. Bring pan to medium-high heat.
  • Place one tortilla in pan, cook until the bottom begins to brown, about two minutes. Carefully flip and continue to cook until other side begins to brown, about two minutes.
  • Remove tortilla to let cool slightly. Repeat with other tortilla.
  • Cut each tortilla in half and serve.

Notes

Change it Up
  • Add blueberries and sliced almonds.
  • Add 2 tablespoons of granola.
  • Replace peanut butter with reduced-fat cream cheese and 1 teaspoon brown sugar.
