An easy on-the-go snack with fruit and peanut butter wrapped in a whole-grain tortilla. |
Ingredients
- 3 tablespoons peanut butter, divided
- Two 10-inch whole-grain tortillas
- 1 large ripe banana, sliced
- 5-6 large strawberries, sliced
- Dash of cinnamon, optional
- Cooking spray
Instructions
- Spread 1 ½ tablespoons peanut butter evenly and to the edges of each tortilla.
- Cover half of each tortilla with half of the sliced bananas and strawberries.
- Sprinkle with cinnamon, if using.
- Fold each tortilla in half and press gently to secure.
- Coat frying pan well with cooking spray. Bring pan to medium-high heat.
- Place one tortilla in pan, cook until the bottom begins to brown, about two minutes. Carefully flip and continue to cook until other side begins to brown, about two minutes.
- Remove tortilla to let cool slightly. Repeat with other tortilla.
- Cut each tortilla in half and serve.
Notes
Change it Up
- Add blueberries and sliced almonds.
- Add 2 tablespoons of granola.
- Replace peanut butter with reduced-fat cream cheese and 1 teaspoon brown sugar.
