Pasta with Mushrooms and Spinach

A lighter take on a pasta dish with farfalle, fresh mushrooms, spinach, and a touch of Parmesan.

Ingredients
  

  • 8 ounces whole-grain bow-tie (farfalle) pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 cup Portobello or other fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, thinly sliced
  • 1 teaspoon fresh thyme
  • teaspoon pepper
  • 2 tablespoons shredded Parmesan cheese

Instructions
 

  • Cook pasta according to directions on package.
  • Drain pasta and set aside.
  • In a large skillet, heat oil over medium heat.
  • Add onion, mushrooms, and garlic. Cook and stir for 2-3 minutes or until mushrooms are nearly tender.
  • Stir in spinach, thyme, and pepper. Cook for 1 minute or until heated through and spinach is slightly wilted.
  • Stir in cooked pasta.
  • Sprinkle with Parmesan. Serve hot.

Change it Up
Substitute your pasta of choice for farfalle.
