Jamaican Jerk Chicken

Ingredients
  

  • ½ teaspoon cinnamon
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons black pepper
  • 1 tablespoon red chili pepper, chopped
  • 1 teaspoon cayenne pepper
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • ½ teaspoon salt
  • 6 cloves garlic, minced
  • 1 cup onion, pureed or finely chopped
  • ¼ cup distilled vinegar
  • 3 tablespoons brown sugar
  • 8 pieces chicken, skinless (2 split breasts, 4 drumsticks)
  • Nonstick vegetable cooking spray

Instructions
 

  • Combine all ingredients except chicken and vegetable spray in a large bowl. Add chicken and coat with spice mixture until well seasoned.
  • Cover bowl and and chill in refrigerator for 6 hours (or overnight).
  • Preheat oven to 350 F. Lightly coat baking pan with vegetable cooking spray.
  • Place chicken on baking pan and cover with aluminum foil.
  • Place baking pan in oven and bake for 40 minutes. Remove foil and continue baking for an additional 30-40 minutes, or until meat can be easily pulled away from the bone with a fork. Serve.
