Ingredients
- ½ teaspoon cinnamon
- 1 ½ teaspoons ground allspice
- 1 ½ teaspoons black pepper
- 1 tablespoon red chili pepper, chopped
- 1 teaspoon cayenne pepper
- 2 teaspoons oregano
- 2 teaspoons thyme
- ½ teaspoon salt
- 6 cloves garlic, minced
- 1 cup onion, pureed or finely chopped
- ¼ cup distilled vinegar
- 3 tablespoons brown sugar
- 8 pieces chicken, skinless (2 split breasts, 4 drumsticks)
- Nonstick vegetable cooking spray
Instructions
- Combine all ingredients except chicken and vegetable spray in a large bowl. Add chicken and coat with spice mixture until well seasoned.
- Cover bowl and and chill in refrigerator for 6 hours (or overnight).
- Preheat oven to 350 F. Lightly coat baking pan with vegetable cooking spray.
- Place chicken on baking pan and cover with aluminum foil.
- Place baking pan in oven and bake for 40 minutes. Remove foil and continue baking for an additional 30-40 minutes, or until meat can be easily pulled away from the bone with a fork. Serve.
