
Classic pasta salad with fresh tomatoes, peppers, cucumbers, onions, and feta cheese, tossed in a zesty dressing. |
Ingredients
- 1 pound rotini pasta
- 1 English cucumber
- 1 red bell pepper
- 1 orange bell pepper
- 10 ounces grape tomatoes
- ½ medium red onion
- 2 tablespoons fresh parsley
- ¼ cup crumbled feta cheese
- ½ cup kalamata (or black) olives (optional)
- One (16-ounce) bottle zesty Italian dressing
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cook pasta according to the package instructions. Drain pasta and set aside to cool.
- While pasta is cooking, prepare the vegetables. Slice cucumbers into half moons, chop the bell peppers, slice tomatoes and olives in half, thinly slice onion, and chop parsley.
- Transfer cooled pasta to a large bowl. Add the prepared vegetables, parsley, and feta. Gently mix together.
- Pour dressing over salad. Toss salad until evenly coated. Add salt and pepper, to taste. Refrigerate for an hour before serving.
