High-Energy Snack Bars

A satisfying snack made with wholesome oats, creamy peanut butter, sweet raisins, carrots and coconut.

Ingredients
  

  • 1 cup honey*
  • 1 cup peanut butter
  • 3 ½ cups quick oats
  • ½ cup raisins
  • ½ cup carrots, shredded
  • ½ cup shredded unsweetened coconut

Instructions
 

  • Preheat oven to 350 F.
  • Add honey and peanut butter to a large saucepan and cook on low heat until melted. Remove from heat.
  • Add oats, raisins, carrots, and coconuts to the saucepan. Mix well and let cool slightly.
  • Pour mixture into a 9-by-13-inch baking pan. Press firmly into bottom of the pan.
  • Bake for 20-25 minutes, until golden brown.
  • Remove from oven and let cool for 15-20 minutes. Cut into bars. Serve and store remaining bars in refrigerator.

Notes

*Avoid giving honey to children under the age of one.
Prep Tip
  • Any kind of dried fruit can be used in this recipe. Try dried diced apricots or cranberries.
  • Substitute any nut butter for peanut butter.
