A satisfying snack made with wholesome oats, creamy peanut butter, sweet raisins, carrots and coconut. |
Ingredients
- 1 cup honey*
- 1 cup peanut butter
- 3 ½ cups quick oats
- ½ cup raisins
- ½ cup carrots, shredded
- ½ cup shredded unsweetened coconut
Instructions
- Preheat oven to 350 F.
- Add honey and peanut butter to a large saucepan and cook on low heat until melted. Remove from heat.
- Add oats, raisins, carrots, and coconuts to the saucepan. Mix well and let cool slightly.
- Pour mixture into a 9-by-13-inch baking pan. Press firmly into bottom of the pan.
- Bake for 20-25 minutes, until golden brown.
- Remove from oven and let cool for 15-20 minutes. Cut into bars. Serve and store remaining bars in refrigerator.
Notes
*Avoid giving honey to children under the age of one.
Prep Tip
- Any kind of dried fruit can be used in this recipe. Try dried diced apricots or cranberries.
- Substitute any nut butter for peanut butter.
