Ingredients
- 1 tablespoon butter
- ¼ cup honey*
- 1 teaspoon vanilla, almond, or coconut extract, optional
- 1 teaspoon cinnamon
- 2 cups old fashioned oats
- Nonstick cooking spray
- ½ cup sliced almonds
- ¾ cup dried cherries, blueberries, or cranberries
- ½ cup banana chips
- ¼ cup raisins
Instructions
- Preheat oven to 350 F. Lightly coat a baking sheet with cooking spray.
- Melt butter in a medium saucepan. Add honey, extract, and cinnamon. and mix well. Add oats and stir until well coated.
- Transfer mixture to baking sheet. Spread into a 1-inch thick layer.
- Bake for 10 minutes, stirring once. Stir in almonds and bake for an additional 5 to 10 minutes.
- Remove from oven and add in dried fruit. Let cool completely before serving.
Notes
*Avoid giving honey to children under one year of age.
Change it Up
- Don’t have honey on hand? Try substituting ¼ cup light corn syrup, maple syrup or molasses.
- Try using a variety of dried fruit like dates, raisins, figs, plums, and apples.
