Ingredients
- 1 egg, lightly beaten
- 2 tablespoons lemon juice
- ½ cup whole-wheat flour
- ¼ cup yellow cornmeal
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 3 tablespoons canola (or other cooking oil)
- 4 catfish fillets
Instructions
- Combine the egg and lemon juice in a medium bowl.
- In another bowl, combine flour, cornmeal, paprika, garlic powder, black pepper, and salt.
- Dip catfish in egg mixtures, then coat both sides with cornmeal mixture.
- Heat oil in a large skillet over medium heat.
- Place fillets in skillet and cook for 5-6 minutes on each side, or until fish flakes easily with a fork. Serve hot.
