Cornmeal Dusted Catfish

Ingredients
  

  • 1 egg, lightly beaten
  • 2 tablespoons lemon juice
  • ½ cup whole-wheat flour
  • ¼ cup yellow cornmeal
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 3 tablespoons canola (or other cooking oil)
  • 4 catfish fillets

Instructions
 

  • Combine the egg and lemon juice in a medium bowl.
  • In another bowl, combine flour, cornmeal, paprika, garlic powder, black pepper, and salt.
  • Dip catfish in egg mixtures, then coat both sides with cornmeal mixture.
  • Heat oil in a large skillet over medium heat.
  • Place fillets in skillet and cook for 5-6 minutes on each side, or until fish flakes easily with a fork. Serve hot.
