Cabbage Confetti

Ingredients
  

  • 3 ½ cups or one (10-ounce) package raw green cabbage, shredded
  • 3 ½ cups or one (10-ounce) package raw green cabbage, shredded
  • One (20-ounce) can crushed pineapple in 100% juice, drained (reserve ¼ cup juice)
  • teaspoon salt
  • teaspoon pepper

Instructions
 

  • If not using prepared cabbage, wash cabbage, cut in half, remove core, shred or cut in very thin slices.
  • Mix green and red cabbage, pineapple, and reserved juice in a large bowl.
  • Add salt and pepper. Gently toss until well coated. Refrigerate for at least 30 minutes before serving.
