Blueberry Orange Mixed Green Salad

A sweet and savory salad with blueberries, mandarin oranges, onion, and feta cheese, in a light vinaigrette dressing.

Ingredients
  

  • 4 tablespoons light vinaigrette salad dressing, divided
  • 6 cups mixed salad greens
  • 1 ½ cups fresh blueberries
  • ½ onion, sliced thin
  • One (11-ounce) can mandarin oranges, drained
  • 2-3 tablespoons roasted sunflower seeds
  • ¼ cup crumbled feta, goat, or cotija cheese, optional
  • Salt and pepper, optional

Instructions
 

  • Add 2 tablespoons of salad dressing to the bottom of a large bowl.
  • Add salad greens, blueberries, and sliced onion.
  • Drizzle remaining dressing on top and toss gently to lightly coat.
  • Carefully fold in the mandarin oranges.
  • Top with sunflower seeds and cheese, if using. Season to taste with salt and pepper. Serve immediately.

Notes

Change it Up
  • Add more color by adding shredded purple cabbage or carrots.
  • Top with fresh or dried fruit such as strawberries, pears, apples, or raisins.
  • Substitute light or low-fat raspberry vinaigrette dressing for the poppy seed dressing.
