Beautiful Beet Salad

Beet salad with crunchy nuts and creamy feta cheese on a bed of fresh baby spinach and drizzled with vinaigrette dressing.

Ingredients
  

  • 3 tablespoons olive or vegetable oil
  • 2 tablespoons balsamic or red wine vinegar
  • teaspoon kosher salt
  • teaspoon ground black pepper, divided
  • 6 ounces or 6 cups fresh baby spinach
  • 1 cup roasted or canned beets, drained and diced
  • cup nuts or seeds, finely chopped
  • cup feta cheese, crumbled

Instructions
 

  • Whisk together oil, vinegar, salt, and pepper in a large bowl.
  • Add remaining ingredients and toss gently to lightly coat with salad dressing. Serve immediately.

Notes

Change it Up
  • Add a few tablespoons of chopped fresh herbs, such as chives or thyme.
  • Add 2 tablespoons or so of lemon zest.
  • Add 1 cup canned mandarin oranges packed in 100% juice or water, drained
