Lucky Mashed Potatoes

A twist on traditional colcannon (Irish mashed potatoes) with spinach and mozzarella cheese.

Ingredients
  

  • 4 cups leftover mashed potatoes (or prepared instant mashed potatoes)
  • 1 cup canned (or frozen) spinach, thoroughly drained
  • 1 tablespoon onion, finely chopped (dried minced onion)
  • 1 cup shredded low-fat mozzarella cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Nonstick cooking spray

Instructions
 

  • Place all ingredients in a large bowl and mix thoroughly until spinach and cheese are well blended into potatoes.
  • Spread potato mixture into a large baking pan coated with nonstick cooking spray.
  • Bake 375 F for 30-40 minutes, or until cheese "stretches."
  • Serve hot.
