A twist on traditional colcannon (Irish mashed potatoes) with spinach and mozzarella cheese. |
Ingredients
- 4 cups leftover mashed potatoes (or prepared instant mashed potatoes)
- 1 cup canned (or frozen) spinach, thoroughly drained
- 1 tablespoon onion, finely chopped (dried minced onion)
- 1 cup shredded low-fat mozzarella cheese
- ½ teaspoon salt
- ½ teaspoon pepper
- Nonstick cooking spray
Instructions
- Place all ingredients in a large bowl and mix thoroughly until spinach and cheese are well blended into potatoes.
- Spread potato mixture into a large baking pan coated with nonstick cooking spray.
- Bake 375 F for 30-40 minutes, or until cheese "stretches."
- Serve hot.
