Blueberry French Toast

A twist on classic French toast featuring slices of French baguette baked with fresh blueberries and topped with your choice of maple syrup or powdered sugar.

Ingredients
  

  • Cooking spray
  • 1 loaf French bread, cut into 20 slices
  • 8 large eggs
  • 2 cups milk
  • ¾ cup brown sugar, firmly packed
  • ¾ cup canned pumpkin
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons cinnamon (optional)
  • 1 small banana, sliced (optional)
  • pinch salt
  • 1 tablespoon powdered sugar (optional)
  • ¼ cup maple syrup (optional)

Instructions
 

  • Spray a 9- by -13-inch pan with cooking spray.
  • Arrange bread slices in pan.
  • In a large bowl, which together eggs, milk, pumpkin, brown sugar, vanilla, and cinnamon.
  • Stir in blueberries and banana.
  • Pour wet mixture evenly over bread slices.
  • Cover and refrigerate overnight or for at least 6 hours.
  • Preheat oven to 375 F. Bake for 30-35 minutes, or until set.
  • Dust with powdered sugar or serve with maple syrup.

Notes

Prep Tip

Freeze leftover pumpkin or stir 2 tablespoons into vanilla yogurt and use as a dip for fruit or graham crackers.

Change it Up

Use fresh or frozen strawberries, raspberries, or peaches in place of blueberries.
