Ingredients
- Cooking spray
- 1 loaf French bread, cut into 20 slices
- 8 large eggs
- 2 cups milk
- ¾ cup brown sugar, firmly packed
- ¾ cup canned pumpkin
- 2 teaspoons vanilla extract
- 1 ½ teaspoons cinnamon (optional)
- 1 small banana, sliced (optional)
- pinch salt
- 1 tablespoon powdered sugar (optional)
- ¼ cup maple syrup (optional)
Instructions
- Spray a 9- by -13-inch pan with cooking spray.
- Arrange bread slices in pan.
- In a large bowl, which together eggs, milk, pumpkin, brown sugar, vanilla, and cinnamon.
- Stir in blueberries and banana.
- Pour wet mixture evenly over bread slices.
- Cover and refrigerate overnight or for at least 6 hours.
- Preheat oven to 375 F. Bake for 30-35 minutes, or until set.
- Dust with powdered sugar or serve with maple syrup.
