Ingredients
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- 2 ¼ cups cucumbers, seeded and diced
- 1 cup cherry or grape tomatoes, halved lengthwise
- ¼ cup red onion, diced
- One 15-ounce can chickpeas, drained and rinsed
- 2 tablespoons fresh basil, torn, optional
Instructions
- Whisk together red wine vinegar, oil, salt, and pepper in a large bowl.
- Add cucumbers, tomatoes, onion, and chickpeas and gently mix.
- Chill at least one hour.
- Garnish with fresh basil, if using, and serve immediately.
